All about salmon

In this course we will use 1 whole side of salmon. Based on this, we will cold smoke, hot smoke, make gravlax and fry a perfectly portioned piece with crispy skin.
During the course, we will use techniques such smoking, dry and wet curing.

By the end of the lesson you will have confidence in these techniques that will take your cooking to the next level.
